everyone loves an origin story…

ru is a pastry chef, who has worked in michelin starred kitchens from the age of 16. her talent and palette have landed her senior roles in some of london’s finest restaurants as well as head chef at wimbledon lawn tennis association royal box. another career highlight was reaching the semi-finals of channel 4’s bake off: the professionals. (aka she guurd, she reel guuurd).

tom developed his passion for flavour and terroir throughout his career as a mixologist, which has taken him around the globe and led to him winning multiple national competitions (he okay).

ruby hue initially started as a pop up concept, however, had to adapt when the hospitality industry was going through a tough time during the covid-19 pandemic. a period from which the industry is still trying to recover! 

ruby hue at that time, like most chocolatiers, used to buy chocolate ready made and then add flavours and other inclusions. however after visiting a craft chocolate fair, we were inspired to learn more about bean-to-bar chocolate making and began reading every book and studying every online forum, until finally the appropriate equipment was bought and we started making chocolate of our own.

we’ve grown a lot since then and are proud to be a part of the craft chocolate revolution, raging against unethical, untraceable commodity cacao.
